Disciplinare di produzione certificato da Bruxelles, la Pizza deve avere un diametro non superiore ai 35 cm, il bordo rialzato fra 1 e 2 cm e nel condimento solo pomodori pelati, mozzarella di bufala campana Doc o la mozzarella Stg, aglio, un filo d'olio, sale e foglie fresche di basilico.
La cottura deve avvenire esclusivamente in forni a legna e, appena uscita dal forno, la pizza dovrà avere una consistenza morbida ed elastica.
